I should know this, but the "gray cells" are getting old. We are moving from an on-premise to a cloud based machine. We are running Infor XA 9 and it uses email for some reports. I cannot see the coding behind it, but analyzing the email headers suggests its using java.mail and relaying thru my local Exchange server. As the local Exchange is going away, I need to point it elsewhere (I have the site). But, Where should I be looking for the config for mail (server or IP) on the IBM server (v.7.4)?

If you are eliminating your local Exchange server, then you must be replacing it with something else, right? Maybe a cloud-based email service like Microsoft 365? (Or something else.)
In that case, you will be given a new "outgoing mail server" to send your email to. Use that for your Infor XA9 in addition to your PC email settings.
If you don't know how to do that, you'd want to contact Infor for tech support.
